My Apple Coconut Oatmeal is the perfect breakfast now that fall is officially almost here.
Naturally I’ve some apple recipes up my (now wearing a cozy sweater or plaid shirt) sleeve. I recently shared my Apple Parsnip Chicken Bake, and today I’ve got another oatmeal recipe.
But as I always say, you can never have too much oatmeal. That’s basically my life motto at this point.
Apple and cinnamon are a classic combo, but I wanted to add a flavor twist, so I went with coconut. But instead of using unsweetened coconut flakes, I used some coconut flour. This works really well and thickens up the oats so they get even more nice and creamy. The oatmeal has a nice hint of coconut, some sweet spice from the cinnamon, and the crunch of the chopped apples. The result is a perfect fall-themed bowl of oatmeal that will warm you up and get you ready for the day, no matter what you’ve got going on.
Plus it smells absolutely amazing, which is always a bonus in my books.
This is pretty much The Best Week Ever in my opinion since it’s the week that all the new and returning fall TV shows come on. I’ve got a pretty long list of all the new series I want to check out, but high on my priority list is the new drama This Is Us. It’s got Mandy Moore and Jess (okay, okay, Milo Ventimiglia). Yup, it’s truly a beautiful time of year: apple and coconut flavoured oatmeal and new TV shows.
- ½ cup rolled oats (gluten-free if necessary)
- ½ cup chopped apple (I used a Jazz apple)
- ¾ cup water
- 1 tbsp coconut flour
- 1 tsp cinnamon
- 1 tsp almond milk
- Put the oats, apple and water in a small saucepan. Bring to a boil.
- Then simmer with the coconut flour and cinnamon for five minutes or until the oats are soft and creamy.
- Add a splash of almond milk, some apple slices and the toppings of your choice.
