Let’s just get this out of the way: IT’S GILMORE GIRLS WEEK.

Okay, I’m not sorry. I’ve been waiting for this for a really, really long time. Like a lot of females from my generation, I pretty much grew up watching Gilmore Girls. I started watching it in the seventh grade when the first season aired on The WB (R.I.P… I still miss that channel). I loved seeing a mother/daughter relationship on TV that looked like how my mom and I acted (for more on how totally Gilmore we are, see this Mother’s Day post).
So today I’m sharing a Gilmore-themed recipe: Coffee Oatmeal.
Actually, I’m not sure that Lorelai or Rory have ever eaten oatmeal in their lives. If they have, they probably were not big fans and followed it up with a donut, muffin, or Pop-Tart. Or all of them. But we can forgive them, right? Even though oatmeal is the greatest breakfast food of all time.
This is one satisfying and cozy bowl of oats. It’s got warming spices like cinnamon, nutmeg, ginger and cardamom, a touch of coconut oil, healthy fats from chia seeds, and of course, glorious coffee.
If Lorelai Gilmore would eat oatmeal, I swear it would be this Coffee Oatmeal. She would follow it up with a giant cup of coffee and she would have enough energy to talk fast and make pop culture references for the rest of the day. Sounds pretty good to me.
- ½ cup gluten-free oats
- 1 tbsp chia seeds
- ¾ cup water
- 2 tbsp brewed hot coffee
- 1 tsp coconut oil
- ½ tsp cinnamon
- ½ tsp nutmeg
- ½ tsp cardamom
- ½ tsp ginger
- Mix your oats, chia seeds and water in a bowl.
- Add your brewed coffee, coconut oil and spices.
- Microwave for two minutes or until creamy.
- Alternatively, you can make this in a small saucepan on the stovetop. Heat on medium-high for a few minutes and stir until creamy.
- Serve with a steaming hot cup of coffee, preferably while watching an episode of Gilmore Girls.
