Lemon Chia Seed Oatmeal

More oatmeal.

But I don’t think you mind, right? How could you go wrong with oatmeal?

My Lemon Chia Seed Oatmeal is like that classic lemon poppy seed loaf that you loved… but in a healthier, gluten-free, dairy-free and sugar-free breakfast.

I used to love that loaf and usually got it from Starbucks. I can still taste it… and even in my memory, it’s super sweet! I used to make a vegan version from a cookbook, and that once was really good, too.

So it was only natural to recreate it along with another one of my favourite things: a steaming hot, creamy bowl of oatmeal.

This oatmeal has a sweet/tart flavour, some crunch and healthy fats from the chia seeds, and will fill you up so you can power through whatever you have planned for the morning. I know I always set myself up for a really good day when I enjoy some oatmeal first thing. I can concentrate in my barre classes, get through my to do-list and am hungry around lunchtime but not crazy starving.

Love lemon poppy seed loaf? This Lemon Chia Seed Oatmeal is dessert for breakfast and totally healthy, too.

Ingredients
  • ½ cup gluten-free rolled oats
  • ¾ cup water
  • 1 tbsp chia seeds
  • 1 tbsp lemon juice
  • 1 small lemon quarter
  • 1 tbsp coconut sugar
  • 1 tsp hemp seeds
Instructions
  1. Put the ingredients in a bowl and microwave for 2 minutes.
  2. Alternatively, cook the ingredients on the stovetop in a small pot.
  3. Top with more lemon zest and a sprinkle of hemp seeds.

  1. I was never a fan of lemon poppy seed bread, but one of my blogging friends sent me a tub of lemon chia granola earlier this year and mmmmm. So good! I imagine I’d love this recipe, too, then! 😀

  6. I used to LOVE the lemon loaf cake at starbucks! I can’t wait to try these since I make oatmeal every morning. It definitely helps keep me full until lunch and I love trying new variations.
