Super Green Salad

When you want salad, you really want salad. The greener, the better.

If there were awards for The Most Popular Healthy Foods On Instagram, they would definitely go to the top three contenders: oatmeal, nut butter (with a huge daily battle between peanut and almond butter), and avocado (especially avocado toast). I’m a superfan of those foods too and so it was only natural that when coming up with a dressing for this salad, I went with an avocado-based one.

Confession: I buy prewashed salad from my local market. It’s a ten-minute walk from my apartment and it saves me a ton of time. I know, you can use a salad spinner but mine is broken and I haven’t gotten around to getting another one, and to be totally honest, prepping and washing lettuce is not of my favorite activities. So prewashed salad it is. I alternate between a mix of lettuces with carrot strips and this mixed greens blend which was the base for this salad.

Now that it’s officially summer (and even halfway through!), we definitely want all the green stuff. My Super Green Salad is the perfect lunch or dinner option and it’s got three kinds of green vegetables: lettuce, cucumber and green pepper. Plus it’s got avocado in the dressing along with some olive oil and sunflower seed butter, so that’s three types of good fat right there.

You can never have enough good fat. That’s basically my life motto.

I’m seriously so excited that it’s July. This is always such a fun, exciting month. It’s officially summer and there is just so much good TV. I’m still halfway through Orange Is The New Black (it’s so good I don’t want to watch it too quickly, and I like to space out my binge-watching sometimes… yup, I take this stuff pretty seriously!) and have started watching the new Netflix drama Stranger Things.

July goals: watch as much Netflix as possible, eat this salad several times a week, and sit on as many patios having drinks as possible.

Sounds like a plan.

My Super Green Salad is pretty green -- with cucumber, green pepper, mixed lettuces and avocado, you won't be lacking in the veggie department.

Serves: serves 4
Ingredients
  • SALAD:
  • 1 bag prewashed mixed greens, or 3-4 cups
  • 1 cup diced cucumbers
  • 1 green pepper, cut into strips
  • DRESSING:
  • ¼ cup olive oil
  • ½ avocado, cubed
  • 1 heaping tsp sunflower seed butter
  • Salt and pepper
Instructions
  1. Assemble your salad.
  2. Mix the dressing ingredients together in a blender.
  3. Serve with any other green toppings you wish, including extra avocado, cooked zucchini, etc.
