Sweet potatoes are my fave.
Right up there with oatmeal and avocados. And peanut butter. And sunflower seed butter. Okay, and blueberries. Love those.
It’s so hard to play food favourites, but those are definitely up there on my list.
And now these Super Sweet Potatoes are totally my fave, too. They’re easy to make and are full of flavour thanks to the spices. I always think that sweet and spicy is a match made in flavour heaven and these fit that category perfectly.
All you have to do is take some sweet potatoes, chop them pretty small, and put them on a baking sheet (or two, depending on how big your baking sheet is). Then you drizzle them with some olive oil and add cinnamon, ginger and cumin. Then all you have to do is bake them for 1 hour while you watch some Netflix, read a good book or scroll through Instagram.
It’s funny that we consider sweet potatoes to be such a fall/winter thing because honestly, I will eat them anytime. I crave them on a regular basis, and not just in crispy fry form (although I enjoy those on occasion, of course). I love roasting sweet potatoes and trying out different flavor combos, and I really like this one.
So if you’re wondering what I eat for dinner on a regular basis, it’s definitely these sweet potatoes with some sort of protein and vegetable. So easy. And so good.
If only everything in life was an easy as these sweet potatoes. Although, of course, that wouldn’t be quite as much fun.
Moral of the story: make your food as simple as possible, but keep working hard.
- 2 sweet potatoes (medium-sized)
- 2 tbsp olive oil
- 2 tsp cinnamon
- ¼ tsp ginger
- 2 tsp cumin
- Preheat your oven to 375 degrees. Line 1 or 2 baking sheets with parchment paper.
- Wash and scrub your sweet potatoes.
- Cut your sweet potatoes in half, then in smaller circular pieces, then finally chop them into smaller pieces.
- Toss with the olive oil, cinnamon, ginger and cumin.
- Bake for 1 hour or until soft and crispy at the same time.
