#throwbackthursday: After School Snacks: Apple Pie Peanut Butter Toast

Apples and school go together like peanut butter and jelly. Like the first cool, crisp days of fall and falling colourful leaves. Like school supplies and classrooms and new clothes and a sense of nervous yet excited anticipation.

After all, there’s a reason we associate a bright red apple with the start of the fall season, and why we think of this fruit as the number one gift for our fave teachers.

Today I’m sharing a second after school snack idea: Apple Pie Peanut Butter Toast.

Choose your favourite gluten-free bread (I love Organic Works Buckwheat Chia Bread or Food For Life Brown Rice Bread) and your favourite brand of peanut butter (I’m all about Nuts to You Nut Butter Crunchy PB). Then it’s all about the apples. I suggest Macintosh because they’re my absolute favourite. Actually, to be totally and completely honest, they’re the only kind of apple I will eat. I know, I know. Such a fruit diva. You can, of course, sub a different kind.

The Apple Pie topping is super simple and will make your kitchen smell absolutely amazing, as a super great bonus. Chop an apple into super thin slices and saute them with some nutmeg, cinnamon, ginger, lemon juice and coconut sugar. This won’t take long — only a few minutes — and you have enough topping for two pieces of toast.

This topping really elevates the humble piece of toast and with the peanut butter, this snack has got it all: healthy fats, healthy carbs, and protein.

I almost wish I was going back to school so I could enjoy this snack after the day’s classes were over.

Except for the fact that I love what I do. But this snack makes me want to go back in time and go back to school.

This easy toast is the perfect breakfast or snack, no matter what age you are.

Serves: 1
Ingredients
  • 1-2 slices gluten-free toast of your choice
  • 1 tbsp peanut butter butter of your choice
  • 1 apple (I like Macintosh)
  • 1 tsp coconut sugar
  • 1 tsp lemon juice
  • 1 tsp cinnamon
  • 1 tsp nutmeg
Instructions
  1. Toast your bread and spread with peanut butter.
  2. Chop your apple into super thin slices.
  3. Put the apple slices into a pan with the coconut sugar, lemon juice, cinnamon and nutmeg. Saute for several minutes until soft and fragrant.
  4. Arrange the apple topping on the toast slices and enjoy.

  1. Apples and PB are a match made in heaven! Also, I LOL’d at you being a “fruit diva” 😛 I am totally the same way about some foods, though! My favorite toast toppings… avocado and sea salt (so basic haha), banana and PB, or a nice big chunk of butter!
