Oats are definitely a favourite breakfast, but sometimes you want to kick it up a notch, and that’s exactly what this recipe offers. Trust me, you won’t regret adding everyone’s favourite summer fruit to your oatmeal! Here’s why: because something totally magical happens. Thanks to the water content in the watermelon, your oats will get super creamy. It’s delicious.
- ½ cup gluten-free oats
- 1 watermelon slice, cubed
- ½ cup water
- 1 tbsp lemon juice
- 1 tsp orange zest
- Optional add-ins:
- almond butter
- coconut butter
- cinnamon or nutmeg
- Microwave your oats, water and watermelon for 2-3 mins.
- Add your orange zest and let sit for about a minute so the orange flavor kicks in.
- Add anything you want: nut butter, coconut butter, spices, other kinds of fruit.
